Summertime, Summertime... Grilled Skirt Steak and Summer Veggie Salad with Peaches & Bleu Cheese...Summer Salad Series...

Grilled Summer Veggie Salad w/ Bleu Cheese & Peaches


Summer time , summer time. It's hot outside and I am ready to get out and enjoy my day or night without feeling weighed down by the food that I am choosing to eat. Salads are always a quick and easy alternative but sometimes can be boring and monotonous. Sexiness much like beauty is defined by the beholder so who can tell you what's sexy and what's not? Often times salads are seen as healthy and delicious but not necessarily sophisticated enough to be deemed sexy. Add the right ingredients mixed with a bit of flair with your presentation and you can effectively place this in your review mirror for good. 


On the menu today: Grilled Skirt Steak w/ Summer Veggie Salad & Bleu Cheese


Skirt steak is a cut of beef that is tender and easy to marinate, it's also not heavy at all and can be grilled in less than 7 minutes. Adding veggies to a salad is a no brainer as is adding fruit, but grilling the two is something that goes with the season and imparts flavor in the best way. Arugula, Bleu Cheese and Naan put this salad in the elite status for me. The pepperiness of the Arugula plays off of the Bleu Cheese and the sweetness of the peaches, while the Naan add the soft texture to the dish.


For this menu we will need the following:


  • Skirt Steak (2-5 #)
  • Arugula (32 oz)
  • Cucumber (1 ea)
  • Peaches (3 ea)
  • Red Onions (1 ea)
  • Tomatoes (4-5 ea)
  • Mixed Bell Peppers (2-3)
  • Green Onions (2 ea)
  • Bleu Cheese (3-5 oz)
  • Garlic (4 cloves)
  • Ginger (2 Tbs)
  • Soy Sauce (1/4 cup)
  • Olive Oil (2 Tbs)
  • Dijon Mustard (2 Tbs)
  • Coarse Salt (TT)
  • Naan or Pita Bread (1/2 p p)




Make the marinade for the steak by mincing the garlic and ginger then adding the soy sauce, olive oil, mustard and whisking together. Pour over the steak and allow to marinate for 30 minutes to 2 hours.

Cut the red onions, peaches, bell peppers, green onions and tomatoes as seen below and marinate in olive oil then grill until done. 





Grilled Veggies & Grilled Peaches 



Grill the steak for 2-5 minutes per side, take off of the grill and allow to sit for 2-4 minutes before cutting against the grain of the meat.

Grill the Naan or pita bread as seen below.

For the dressing we will need the following:

  • Sesame Chili Oil (1 Tbs)
  • Balsamic Vinegar (1 tsp)
  • Soy Sauce (.5 tsp)
  • Coarse Salt (t t)

Add the dressing to the Arugula, grilled Veggies and sliced cucumbers then add the bleu cheese. Plate in any way you desire or as seen below.
